I recently embarked on such a journey to Greece, seeking the flavors of the Mediterranean and the wisdom of its cuisine. Little did I know that some of the most mouthwatering delights could be found in the simplest of ingredients.
One of our culinary adventures led me to the enchanting world of Greek cuisine, specifically Cretan cuisine, where I discovered the art of turning humble ingredients into incredibly tasty dishes. While on Crete, we had a cooking class with Do It Like A Cretan, Frini. She came to our house and taught us aa few simple recipes with large amounts of flavor.
Join us as we explore two of their delicious findings: Bougiourdi and Kleftiko.
Bougiourdi: Pepper, tomato and feta bake
Bougiourdi, a dish with roots in Greek and Mediterranean cuisine, exemplifies the beauty of simple ingredients coming together harmoniously. To prepare this delectable appetizer, follow these easy steps:
Ingredients:
Bell peppers
Tomatoes

Feta cheese

Sourdough bread

Begin by cutting up the bell peppers and tomatoes.

This method of cooking allows the flavors to meld beautifully in parchment paper pouch. Here's how to prepare Kleftiko:
Ingredients:
Lamb (or meat of your choice)
Potatoes
Zucchini
Oregano
Salt
Pepper
Olive oil
Parchment paper
Instructions:
Start by cutting up your vegetables – potatoes and zucchini work wonderfully.
Lay out a piece of parchment paper.
Place a portion of your chosen meat in the center of the paper.
Add the cut-up vegetables around the meat.

Carefully fold the parchment paper like an envelope, sealing in all the ingredients.
